SPECIALTY OF THE HOUSE: Chef Charles Ranhofer’s 1894 Delmonico Sirloin Steak, recipe No. 1375. According to Schwerd, chefs for years disagreed about how to prepare the original Delmonico Steak from the Delmonico Hotel in lower Manhattan. Schwerd decided to do his own research and came across the original Delmonico Steak recipe in “The Epicurian,” a complete treatise on the culinary arts written by Ranhofer. “When someone comes in and orders a Delmonico from us, they’re doing more than ordering a quality steak. They’re stepping back in time,” Schwerd said.

POPULAR APPETIZER: Lamb chop fondue; calamari.

POPULAR BREAKFAST: AG Benedict (two poached eggs over English muffins with grilled tenderloin and béarnaise sauce).

POPULAR LUNCH ENTREÉ: Waldorf salad.

POPULAR DINNER ENTREÉ: The 1894 Delmonico sirloin steak.

POPULAR DESSERT: Butter cake; chocolate ganache; do-it-yourself s’mores.

AVAILABLE FOR: Dine in, take out, parties.

PRICE RANGE: $3.99 to $40.99. The average check is $45, Schwerd said.

WHAT ELSE YOU SHOULD KNOW: Schwerd, a Maryvale High School and Scottsdale Culinary Institute graduate, put his stamp on the menus of some of Arizona’s finest eating establishments, including Mastro’s Steakhouse, Mastro’s Ocean Club and Drinkwater’s City Hall Steakhouse in Scottsdale. The bar has cocktail hour from 4 to 10 p.m. seven days a week featuring Long Island iced teas and AG margaritas for $4 and AG martinis for $6.

UNIQUE TIDBITS: Arrowhead Grill’s signature all natural steaks, as well as the rest of the menu items, are carefully selected. The restaurant uses all natural meats and fish as well as organic vegetables. “In this business, you’re only as good as your last meal,” Schwerd said. “And a meal can only be as good as the ingredients you choose.”

FUTURE PLANS: Arrowhead Grill is offering Thanksgiving dinner next week from 1 to 8 p.m. For $49.99, guests can dine on a prix fixe menu that includes a choice of entrée including turducken, a signature Delmonico steak, prime rib, Atlantic salmon or Alaskan halibut. Four different desserts, including Schwerd’s signature sweet potato pie, will be offered. Reservations are required.
